Nishma Shah is the vegan chef behind Shambhu's, the award-winning London-based family-run vegan food business. 

One secret of Shambhu's success is how Nishma draws inspiration from culinary styles from around the world. 

At the Brighton VegfestUK, Nishma of Shambhu's, in partnership with The Vegan Society, will take you on an African culinary journey, by demonstrating a popular, hearty and nourishing Kenyan vegan dish, made using fresh, simple, wholefood ingredients.  And Nishma will be adding a slight Asian twist to the experience too :-)

Deb combined her interests as a lifelong passionate foodie with a keen interest in a raw plant-based diet to found After working in the creative sector for 25 years she followed her dream to train as a chef at the Matthew Kenney Culinary School. She wants to break the myth that raw food is about eating boring salad and show you can enjoy fabulously indulgent food with many nutritional benefits. She is a regular food writer for the award winning company, Great British Chefs.

Head chef Matty Bowling of award-winning vegetarian restaurant Terre a Terre in Brighton will be preparing a vegan version of oyster orzotto:

Seared pine infused king oyster mushroom served with pearl barley and Jerusalem artichoke puree risotto with chives and lemon zest and raw almond cremousse with homebrew garlic white wine vinegar served with sumac potato chips, baby chard and dried porcini pine ash.

A qualified nutritional therapist, raw foods enthusiast and 4th generation Tai Chi Chuan practitioner, Stella has formulated a system that incorporates science with spirituality, this she calls ‘The Yin Yang philosophy of wellness' which combines all of her talents and learnings. In this food demonstration Stella will prepare a delicious raw vegan soup, and raw snack bars that are balanced with the Yin Yang approach. As well as sharing samples of her celebrated superfood raw vegan chocolate!
